Tortilla Soup

Serves: 12
Time: 50 minutes

Ingredients
-2 TBSP vegetable oil
-1 lb pkg of frozen pepper and onion stir fry mix
-2 minced cloves of garlic
-3 TBSP cumin
-28 oz can crushed tomatoes
-3, 4 oz cans chopped green chile peppers drained
-4, 14 oz cans vegetable broth
-11 oz can of whole kernel corn
-12 oz tortilla chips

1. In a large pot, heat oil over medium heat. Stir in the stir fry mix, cumin, and garlic. Saute for 5 minutes, or until the vegetables are tender.
2. Mix in the chile peppers and tomatoes. Then, pour in the broth.
3. Taste, and season with salt and/or pepper.
4. Bring to a boil, reduce heat and simmer for 30 minutes.
5. Mix in the corn and cook for 5 more minutes.
6. Serve in bowls over equal amounts of tortilla chips. Top with cheese and avocado!
